DUJAC Domaine Dujac of Morey St Denis is one of the great, great names of Burgundy. By Burgundy standards, this is a relatively new domaine, having been started by Jacques Seysses only in 1967. His family purchased an estate in Morey then owned by Marcel Graillet, having holdings in Clos de la Roche, Clos St Denis and Gevrey Chambertin “Aux Combottes”; these became the nucleus of Domaine Dujac. Some vines in Echézeaux were added in 1969. The domaine’s small holdings in Bonnes Mares were also purchased in 1969, coming from one of the branches of the Hudelot family. In 1977 more vines in Clos de la Roche, Clos St Denis and Gevrey “Combottes” were added to the original holdings, as well as .70 hectares of Charmes Chambertin. In addition to the Combottes and the grand crus, there are also premier cru holdings in Chambolle Musigny “Gruenchers” and in a handful of Morey St Denis premier crus. Since 1991 there has also been a parcel of Vosne Romanée “Beaumonts” that the domaine leases, and, since 2005, additional Beaumonts as well as slivers of Chambertin and Romanee St Vivant. Also not to be forgotten are two of the finest villages wines to be found in the Côte d’Or, a Chambolle Musigny and a Morey St Denis. On the white wine side of the ledger, there has been for a number of years a Meursault “Limozin”, and now a Puligny Montrachet villages bottling as well. After the frosts of 1985 a .70 section of Morey villages was replanted to Chardonnay, so there is a bit of Morey Blanc as well now. The Dujac style of wine is not for blockbuster, highly-extracted and powerful wines. In fact, color wise, they often are some of the lighter wines to be found in the Côte de Nuits. However, though they are lighter than most in their youth, this is not to say that the wines lack at all in terms of intensity or concentration. As the tasting notes below will attest, these wines not only drink well in their youth, but they age extremely well. Jacques Seysses believes (as do many of the best producers in Burgundy) in as minimal as possible intrusion into the winemaking process. The wines are given a few days of pre-fermentation maceration, fermented with natural yeasts, aged in a significant percentage of new oak, and bottled without filtration. The stalks are retained in the fermentation process, which will often cause the most recently released vintage to seem a bit herbaceous immediately out of the blocks. However, as these wines gain a few years of bottle age, this nuance vanishes, and the pure expression of terroir that Dujac wines are rightly renowned for takes center stage. It is always interesting to me to hear comments that the “winemaking signature” is so prevalent in the wines of Domaine Dujac. While this tenet could be argued for the wines when they are first released (after all, the percentage of new oak here in not insignificant), the wines very quickly become soildriven and admirable expressions of their respective terroirs. HENRI JAYER It is interesting to reflect upon the fact that in many ways Henri Jayer is portrayed as a modernizer in Burgundy, as many of the techniques that he pioneered in the region have been embraced by legions of vignerons, but in many respects he represented a return to a very traditional approach to winemaking. His emphasis on viticultural practices and the meticulous care that he gave to his vineyards are simply the most obvious facets of his traditional methodology. Henri Jayer revolutionized winemaking during the course of his career. Amongst his very many accomplishments was his emphasis on limiting yields in the vineyard, allowing the cooled must to macerate for a few days prior to the onset of alcoholic fermentation to allow colors to set and adding to the aromatic complexity in the finished wine and bottling the wine unfined and unfiltered. He always spoke of the importance of treating the wine gently during the fermentation and elevage process, which he likened to “moving a sleeping baby who must be carried to its bed from the sofa upon which it has fallen asleep.” He also was a proponent of one hundred percent new oak for his wines. This was the one precept of his winemaking technique that cannot be described as traditional, and it is the one most often cited by modern winemakers when they seek tosprinkle a little of the “fairy dust” of Jayer inspiration on their own wines. There is little doubt that the concept that a grand cru “deserves to be raised in one hundred percent new oak” that is often heard in Burgundy these days can be traced back to Henri Jayer and his success with new wood. However, one of the interesting things I have always found about Henri Jayer’s wines was that I have never tasted one that was over-oaked. He often talked of other producers’ wines which he found too marked by their wood components, and which he liked to describe as “under-wined rather than over-oaked.” I last saw Henri Jayer in November of 2003, at a dinner at a friend’s home in Burgundy. He was lively and warm to everyone gathered around the table that evening, though characteristically still quite honest with his evaluations of the wines served. There were plenty of younger vignerons at the dinner that evening, and as their wines were served, Monsieur Jayer was supportive and appreciative of each wine poured by a winemaker in attendance. But his eyes really lit up as I decanted the last wine of the evening, a 1921 La Tâche bottled by Liger-Belair (1921 predating the vineyard’s monopole status with Domaine de la Romanée Conti). As we poured the wine around the table, he paused and observed: “You know, we are drinking history here- just imagine what was going on in the world at the time this wine was bottled. It is really amazing after all the world has been through since 1921 that this bottle is still here with us today, and that it is still good.” As he took a sip of the 1921 La Tâche we all followed suit. And then he observed that “in the end this is all we can ask for as vignerons- as people, to try and make a bit of history.” That, Monsieur Jayer, you most certainly did, and we will all miss you. How do you determine great? Is it size? Is it quality? Is it price? Is it ‘reputation’ (whatever that is)? Is it the amount of media coverage? However you do compute it, the greatest domaines of Burgundy today must be those under the control of Lalou Bize: the Domaine Leroy and her own Domaine d’Auvenay. The estates of Jadot, Faiveley and Bouchard Pere et Fils are far larger, that of Romanee Conti the most splendid in terms of the percentage of grand cru terroir, but for the nobility of its wines, pride of place must go to Leroy and to Domaine d’Auvenay. The sheer concentration, depth and intensity Lalou Bize manages to squeeze into her bottles is breathtaking. Lalou, born in Paris, was brought up in Meursault, in the mansion today occupied by her daughter Perrine. “From the word go I was fascinated,” she says. “I was a cellar rat, watching and helping the cavistes rack the wines, taste them, bottle them. My mother kept calling me to come out of the cellar and play with my friends like a normal schoolgirl, but as soon as I could I crept back.” In 1955 she persuaded her father to let her take over. She was twenty-three. “He gave me carte blanche,” she says. “I started as I meant to go on. I bought finished wine, and only that which pleased me.” Lalou is now happy at the Domaine Leroy and on her own. “Look at my vines,” she will say. “Look how healthy and comfortable they are.” And, being Lalou, she will not fail to point out a neighbor’s plot of excessively abundant, uncontrolled growth. “And come and taste the wine.” Lalou’s wines, according to her, are always ‘extra’. GEORGES ROUMIER Domaine Georges Roumier occupies a very significant place in the history of Burgundy. It is a young domaine by Burgundy standards, having only commenced under its current guise in 1924 with the marriage of Monsieur Georges Roumier to Mademoiselle Genevieve Quanquin, who brought with her a handful of the family’s vineyards as a wedding dowry. At that time the domaine had Chambolle Musigny villages and premier cru vineyards (including Les Amoureuses), as well as Bonnes Mares. Georges also took on a tiny parcel of Musigny “en metayage” at this time. The domaine was enlarged a number of times since its inception in 1924, with Georges acquiring a bit more Bonnes Mares in 1952, as well as two parcels of Clos Vougeot in the same year. In 1953 the Roumiers also purchased the monopole premier cru Morey St Denis “Clos de la Bussierre.” In 1968, Jean-Marie’s wife, Odile Ponnelle, purchased a tract of unplanted Corton Charlemagne, which was subsequently committed to vine and the first Roumier Corton Charlemagne was released in the 1974 vintage. In 1978 the domaine finally purchased the small slice of Musigny that they had been sharecropping since the mid-1920s. The Domaine Georges Roumier was one of the producers that was encouraged by the founder of La Revue du Vin de France, Raymond Baudoin to begin bottling some of their wines themselves, and selling them directly, rather than to the negociants. Along with producers such as the Marquis d’Angerville, Armand Rousseau, and Henri Gouges, the domaine began estate bottling their wines soon after the first world war, and was one of the domaines that Baudoin encouraged American importer, Frank Schoonmaker to offer in the United States. As such, the Roumier wines are some of the very few Burgundy producers where one can come across older, estate-bottled wines in cellars here in the United States. Domaine Georges Roumier is one of my favorite domaines in all of the Côte d’Or. In my personal cellar, by quite some margin, I have more Roumier wines than from any other producer. I find them to be extremely reliable for cellaring, and to deliver at their apogees all the majestic complexity for which Burgundy is rightly renowned. Out of the blocks they are not the typically delicate style of Chambolle, but rather wines that are full and well-structured in their youth. For young Chambolles they are atypical, but within the fullness of time, they develop all the silk and perfume for which the wines of this village are so rightly cherished. From the superbly-crafted Chambolle Musigny village bottling that I buy in depth in every vintage to the lonely bottle of Roumier Musigny, these are among the greatest wines that I have in my cellar, and bottles that I look forward to growing old with comfortably. Actually, having these Roumier wines in my cellar helps make the thought of growing old a bit more comforting, knowing that as I slow down the Bonnes Mares will be softening and blossoming. One will get little argument to the assertion that Domaine Armand Rousseau is the finest estate in Gevrey Chambertin... The vintages of the 1980s and 1990s at Domaine Rousseau have produced one of the greatest runs of profound Burgundy ever witnessed by any estate in the region, with the domaine producing legendary efforts in the widely recognized great years of the span from 1985 to 1999. Their two flagship bottlings of Chambertin and Chambertin “Clos de Bèze” have always ranked amongst the top dozen wines to be found in these vintages. However, what it generally not known is how brilliant the Rousseau wines have been in the more difficult vintages of this stretch, such as 1986, 1987, 1992, 1998 and 2000, where the wines have delivered astonishing quality for their respective vintages, and are amongst the great sleepers to be found. The size and dimension of the lesser years may not quite match the great vintages, but the complexity, breed and suave refinement that are the hallmarks of Domaine Rousseau wines are to be found in every one of these wines.

When Dom Pérignon is at its best I find notes of forest morelles, cream, peach and an overabundance of roasted coffee beans and nuttiness. Dom Pérignon Rosé is an even more exquisite and rare product that has been molded in a similar form, though its fullbodied shape leans more to strawberry or orange, where the whiter somewhat lighter variety becomes exotic and toasted. At Richard Geoffroy’s initiative they now release a restricted number of old, wellpreserved bottles from Moët’s own cellar in different stages of maturity. The wine can be newly disgorged, but it isn’t a fixed thing. This treasure is now decorated with a luxurious black label in unmistakable style. And speaking of style…In an age when PR people constantly want to minimalize labels and change both bottle design and packaging, Dom Pérignon stands there like a Sophia Loren of the champagne world, unchanged and as timelessly sexy. The balance conveyed in the subtly curvaceous shape of the bottle, paired with an olive-green label in the shape of a coat of arms adorned with cursive writing, is still as magical as ever. Since 1970 the wine itself is made exclusively in steel tanks and the grapes are mainly Pinot Noir from Aÿ, Bouzy, Verzenay and Hautvillers, as well as Chardonnay in approximately equal amounts from Cramant and Mesnil. KRUG Of all the wine world’s luxury brands, Krug is perhaps the most glittering. No expense is spared in its production, though the techniques used are in fact remarkably artisanal, including fermentation in small, old wooden casks. Time is of the essence: the overall ageing cycle is the best part of a decade here, with all wines being aged for at least six years sur pointes (upended, after the “ordinary” ageing period that follows the second fermentation is concluded). No expense is spared, either, in the pricing of its five wines, the cheapest of which, Grande Cuvee, costs as much as many rival houses’ top cuvees. This is a wine of magnificent complexity and layered richness, nourishing and diverting, as detailed and textured as a Gobelin tapestry. It contains wines from a decade’s worth of vintages and from at least twenty different crus (not all of them Grand or even Premier, one might note); Krug makes no secret, too, of its need and love for Pinot Meunier. (The Krug 1928 vintage, regarded by the family as the greatest ever, contained twenty percent Meunier, and there is eighteen percent in the finely honed 1988.) There is also a relatively understated rose of pale tawny hue, and a series of vintage wines of magnificent stylistic oscillation, fully respecting the potential of each year. The Collection vintage wines have spent more years in the Krug cellars in Reims; disgorgement took place at the same time as for “ordinary” vintage wines. Finally, a champagne de terroir: the pure Chardonnay Clos du Mesnil, vinified from wines in a genuine 1.9 hectares walled vineyard within the village of Le Mesnil, purchased by Krug in 1971, and released as a vintage wine beginning with 1979.
