REJUVELAC-‐NATURAL PRO BIOTIC Rejuvelac is a tonic drink made from wheat. It is rich in enzymes and many nutrients. A must have to restore the intestinal flora back into the intestines. Which have been lost due to the consumption of harsh cleanses and anti-‐ biotic’s. Anti-‐biotic’s do not have an “intelligence” that discriminates between the bad bacteria (sicknesses) or the good bacteria (pro-‐biotic) which is necessary for our very survival, the intestinal flora.Rejuvelac contains eight of the B vitamins, vitamins E and K, and a variety of proteins, dextrines, carbohydrates, phosphates and amylases. It is rich in enzymes that assist in digestion. During the fermentation lactic acid is also being produced. When taking an anti-‐biotic, it takes up to 6 months to rebuild the good intestinal flora. All the while, you become more susceptible to more illnesses and diseases because you don’t have the good bacteria (probiotics) to ward off the bad bacteria. This would be VERY important to take while on anti-‐biotics. This taken regularly can help and increase your immunity so that you won’t need to be on anti-‐biotics. Who can take Rejuvelac? § The healthy and the sick. § Children and Adults. § Diabetics can have it if in small quantities in diluted form. Ingredients: § 1 cup wheat berries or any cereal grain. (including barley, oats, rye, wheat, unhulled millet, brown rice [any rice], and raw unhulled buckwheat). § 5 cups water (distilled is best, but not a must). § 2-‐quart glass container. § Cheese cloth or sprouting lid . Directions: Preparation of Rejuvelac is simple, but it does take some time, so it must be made in advance. You will need a clean, wide-‐mouth jar, measuring one-‐half or one gallon; a piece of nylon mesh or cheesecloth; a supply of soft wheat berries (spring wheat); and a strong rubber band. Fill the jar one-‐fourth full of wheat berries. Cover the mouth of the jar with nylon mesh or cheesecloth, and secure the mesh with a strong rubber band. Add enough spring or filtered water to fill the jar. Allow the wheat berries to
soak for eight to ten hours, then drain them, rinse, and drain again. Place the jar at an angle so the berries continuously drain. Make sure that the wheat berries do not completely cover the mouth of the jar, because they will need ventilation. The wheat berries will start to sprout. Rinse them about two or three times a day during the sprouting stage. After two days, rinse the sprouted wheat berries thoroughly for the last time. Drain off the rinsing water, fill the jar to the top with spring or filtered water, and allow the sprouts to soak for forty-‐eight hours. At the end of this time, this soaking liquid is your first batch of Rejuvelac. Pour this off into another jar for immediate use or keep it in the refrigerator to slow down the fermentation process. Refill the jar with the same amount of spring or filtered water to make your second batch of Rejuvelac. but this time soak the sprouts for only twenty-‐four hours. Pour off this second batch and refill the jar with the same amount of spring or filtered water to make the final batch of Rejuvelac. Again, soak the sprouts for only twenty-‐four hours. After you have made three batches, feed the spent wheat berries to the birds. Good Rejuvelac is a cloudy, slightly yellow liquid with a tart, lemonade flavor. When it is fermented too long, it can become very sour. Since it is constantly fermenting, it is natural that tiny bubbles rise through the liquid occasionally. The very best Rejuvelac is in fact slightly carbonated. It is also natural for a layer of white foam to form on the top of the Rejuvelac. This is not harmful and can be used. Rejuvelac can be kept in the refrigerator for a few days to a week, as long as the taste is still agreeable with you. Drink Rejuvelac before or between meals to avoid diluting the digestive juices after a meal. -‐ from Ann Wigmore's "The Blending Book" ***NOTE***: At first, you may notice a “bad” smell, but when you add lemon juice it goes away and you also get used to some of it. The nutritional and value this provides, is well worth the initial hesitation. Your health is in your hands. The idea behind Rejuvelac is that when the wheat berries sprout, you’re getting a lightly fermented product that packs a wallop when it comes to nutritional value. It’s also said to add pro-‐biotics to your diet, by improving the intestinal flora, which increases your immune defense!
